My friend Steph gave me this recipe. It's freakin delish AND easy to make.
I semi-cheated last night and used Pillsbury thin crust pizza dough instead of buying the fresh stuff, but I didn't feel like waiting for the dough to rise, etc. It still tasted great, but I would recommend using fresh dough, or at least the regular Pillsbury dough (not thin crust).
You will need:
2-3 pieces of boneless, skinless chicken breast
1 bag of mozzarella cheese
1 bottle of Sweet Baby Ray's BBQ sauce
(No other BBQ sauce compares!)
Extra virgin olive oil
Start by cooking the chicken in a frying pan. I "pound" the chicken out (ohhh, so dirty) so it's thin and cooks faster. Once cooked, shred the chicken up into smaller pieces.
Next, roll your dough out onto a sheet, or pizza stone, and coat it with EVOO. SN: EVOO was coined by Rachel Ray, who is annoying as fuck, but grew up about 30 minutes away from where I live.
After the olive oil, add the BBQ sauce - as little or as much as you want!
Follow that with the cheese.

And finally, I put the cut up chicken into a bowl, mix it with BBQ sauce and then top the pizza with it.
If you are used fresh dough, cook the pizza at 425 degrees for about 25-30 minutes.
If you used packaged dough, you're a cheater.
Just kidding...follow the cooking instructions on the package.
