Sweet and Sour Chicken

I have to warn you; this meal does not look pretty, but it tastes fantastic.

When my mom started making this recipe a few years ago, I refused to eat it because I was convinced someone threw up in a dish and she cooked it. Don't get me wrong; it smelled great, but I was a food snob and would not try it until recently. Now, it's one of my favorite meals and it's easy to make.

Here's what you'll need:

8oz bottle of Russian dressing - not Thousand Island
(or half of a 16oz bottle - 8oz can be hard to find)

8oz jar of apricot preserves

1 package of boneless, skinless chicken tenders

1 packet of dry onion soup mix

Brown rice (or white - I don't discriminate)

Even the ingredients sound funky, but stay with me!

First, pour the apricot preserves into a big bowl and mix.

 Add the Russian dressing and mix together.

Add chicken tenders into the bowl and stir so the chicken is coated

Pour into a baking dish (I used 13x9) so that the chicken is in one layer.

Sprinkle dry onion soup mix over chicken and cover with foil.

Bake at 350 for 30 minutes.

Take the foil off and put it back in the oven for another 5-10 minutes.

Cook rice separately while chicken is in the oven.
