Mexican Stuffed Peppers

4-5 medium bell peppers
1 lb ground turkey 
1 packet of low sodium taco seasoning
1 cup of rice (whatever kind you like)
Fat free cheddar cheese

Pre-heat oven to 350 degrees.

1. Clean out the peppers and put them in boiling water for 5 minutes. Drain. Set aside.

2. Cook the turkey, drain if needed. Add taco seasoning.

3. Rice...ohh, the rice. I used this:

And it turns out there are two ways you can make it in the microwave. You can either cut one side to vent OR you can forget to do that and have it explode open about 60 seconds in. Oops. 

I legit dropped to the ground...I thought a bomb went off.

4. Once the meat is seasoned, combine it with the rice and stuff the peppers. There was enough to make 5 peppers, but I only bought 4 so I had some mixture leftover.

5. Spray a dish with cooking spray (I used an 8x8 glass dish) and place peppers in it. Cover with foil.

6. Bake for 30 minutes at 350 degrees.

7. Take foil off, add cheese, and put back in the oven for another 5 minutes or until cheese is melted.


This is the first time I've made stuffed peppers and actually liked them.
